Tonight, the first day after the New Year's vacations, I feel like I'm starting off on a fairly low note, but I want to keep my spirits high (⤴️), so I opened this bottle for the first time in a while 💁. La Jomon Junmai Shu Takumon Nama Shu 2024BY✨ We were lucky enough to get a bottle of the first new sake of the new brewing year, so we're going to open the bottle as per the ironclad rule that you should drink your sake as soon as possible 🤗. The aroma is gentle, as you would expect from yeast #6, with refreshing notes of pear, muscatel fruit, citrus and herbs 👍 The taste is also simple, with a hint of citrus and herbs. The taste is also simple but has a deep acidity and an edge of bitterness and spiciness that is delicious 😋😋😋😋. I have the impression that the acidity and bitterness are clashing a bit since it is quite cold, but I expect it to harmonize and become more delicious after tomorrow, so I'm looking forward to its potential 😊.
