It is a Niigata light and dry sake, but a bit different.
The aroma is weak or absent. It is a food sake.
It is easy to drink with a slight sweetness.
It tastes umami, and the acidity and alcohol give it a sharpness and a dry taste.
It has a dry taste.
We had Iwashita fresh ginger fish paste tempura and Iwashita fresh ginger octopus as snacks.

The spiciness of the ginger and the spiciness of the sake went well together.
We enjoyed it with snacks we bought at the Iwashita New Ginger Museum in Tochigi Station yesterday.
It is a cosy sake. The cat on the label is also fun.
