Seikagami (the expression of the sake poured into a cup is likened to a mirror, which is said to mean that the brewer's sincerity should be reflected in the sake). I've had a bottle of "Seikagami" before, but never had a bottle of "Gen"!
Apparently, the series that uses apple peel yeast is called "Gen".
