This time it is Suwaizumi's Rabbit label. This sake is from Tottori. It is a junmai sake that has been aged for two summers and is a standard sake. The label was drawn by "Frog Studio" in Hoki-cho, Tottori Prefecture, and the rabbit, composed and drawn of plants, animals, and fungi, is based on the "White Rabbit of Inaba". It is served at room temperature. Yellowish tint. Aroma of soy sauce and dried shiitake mushrooms. It has a mild mouthfeel. It has a base of matured Sanin sake-like flavor, but it has a good balance of mild sweetness of rice spreading from bitter brown rice, acidity with matured umami, and a good bitter sharpness, and is overall neatly put together and easy to drink! When warmed up, the peculiar part of the matured aroma (which is not so much) settles down and the umami and acidity become more defined and the taste tightens up👍. During my GW Sanin trip, I found Suwaizumi's Sandesi at a Montbell store just before the trailhead of Daisen and took it home immediately. If it was this good, I should have bought a bigger one 😭.
