The aroma of banana is strong. After a slight stimulation on the tongue, the acidity from the sake yeast and the strong aroma pass through the nose and then quickly recede. The acidity leaves a slight bitterness, but it is excellent as a food sake, acting as a wash to bring the flavors of each dish together and move on to the next dish. At this temperature, it is therefore a good match for oily dishes.
