I have had Hitogokochi Junmai and Jungin, Yamadanishiki Jungin, and Kinmonishiki Jungin, but I had no luck with Yamae Nishiki, so I finally bought it last year. I finally bought it last year, but kept it in storage because I didn't want to waste it...but then I was able to buy two bottles of this year's Yamae Nishiki, so I finally opened the 2023.06 shipment of Yamae Nishiki!
It has a beautiful ginjo aroma typical of Shinshu Kamerei, but surprisingly it is only modestly fragrant.
I don't know if it's because I let it sit for a while or if it's just the way it is, but I was quite surprised at how much more subdued the overtone was than I had imagined!
It has a crisp "character" on the palate, which makes me think it is a Shinshu Kamerei after all. The taste is quite beautiful, a clean dry sake with no cloying taste. It is clearly not a stand-alone sake, but a food sake.
However, it has a more robust impression than other Shinshu Kamerei sake, and it is full-bodied or deep in flavor.
The second day...no drinking. Laughs
The third day...the usual "character" has appeared! A little sweetness can be felt, and a gentle sweet-acid taste. It's more like Abeno Junmai (fire-aged) than Shinshu Kamerei. The softness is not changed at all, and it is very tasty, though it is not so subtle! This might be bad...it is a taste that lingers. I'm gradually moved...!
