It has a fruity taste and no bitterness, which is typical of Eiko Fuji. The sake level is -5, but it is not too sweet, so it is easy to drink. I tried Tamura, which is made from the same rice, but it tastes completely different and interesting. The website explains the origin of its survival, but in fact it says "it is easy to drink, but even if you drink a lot of it I'm assuming it's a message from the brewer telling me to "survive" lol. It's definitely better to pair it with something sweet than something salty, which emphasizes the clean quality of the sake. It matched wonderfully with kakiage (fried corn), but it might be good with tengaku, too. Sake meter value -5.0 Acidity 1.5
