Today's hiyaoroshi is from Oshinshu, Nagano Prefecture. It is gorgeous and fruity. There is a slight acidity on the palate. The end taste is astringent and cohesive. Well balanced and delicious 😋. It went well with yellowtail and halibut sashimi and fried horse mackerel 🍶.
