This is a special sake from Yoshida Kurau that I was most curious about in the Imameya hanpukai.
This is a kijoshu, but it is brewed with Hyakumangoku No Shiro, the newest sake rice in Ishikawa Prefecture, and Kinshu, the oldest native rice in Ishikawa Prefecture.
It has a rich flavor as is typical of kijoshu, with a minerality typical of Yoshida Kurau, but you can also taste the wildness derived from kinchaku, giving it a very complex flavor.
This kijo-zake is so good that it rivals and even surpasses Shinmasa's Yonotori.
It may be especially recommended as a dessert sake.
The label is cool and very satisfying.
