What is Hyakuyonjyu?
It is said to be derived from the sake rice used, Hana-souri, whose strain name before it was named was Blue Sake 140. It is a rice suitable for sake brewing developed by Aomori Prefecture with the aim of producing a rice comparable to Yamadanishiki, and is suited to high refining. Yamada-Nishiki and Hanafukuyuki are the parents.
It is said to have an elegant and refined aroma, a mellow mouthfeel, and a moderate fullness of flavor.
