Hidakami is known for its dry taste, but this sake is super dry. It is certainly dry and refreshing, but you can also taste the umami and acidity of the rice, so it is not just dry. I've tried it at room temperature, but it definitely looks good warmed up, or even a little chilled for a crisp, clean finish! Of course it goes well with fish dishes, I had it with horse sashimi and ankimo and it went very well with those too because of the strong flavor😊.
