Imabari is famous for its yakitori, especially the skin 🐔 which is grilled on a teppan (iron plate) to a crisp and served on a flat plate. Other parts of the chicken are served separately on a plate or on skewers depending on the restaurant, but the teppan is the same ✨.
The skin is best when it is crispy and dry🤣The sake is light and dry, which helps to wash away the fat from the chicken, and is made to match the local ingredients 🍶.
On the cab ride home, I asked the driver why they used teppan grill instead of charcoal, and he replied, "Because it's too much trouble to prepare it with charcoal. I don't like yakitori, so I don't know much about it" 🤣.
