I really recommend the Kaku-uchi pairing set at Tsukiya-ya. The tastes of the entrées are delicious and too much fun, such as the dashiwari sake only available here and the comparison of heated sake flavors in large-medium-small flat sake cups.
The heated Shirataka Umeshu (plum wine) with dashiwari was especially delicious, and tasted as if it contained plum flesh. I challenged myself to taste that impression at home. Since Shirataka was sold out, I tried Shiraoi's plum wine, which I had on hand.
I managed to reproduce the fleshy taste of plums with 80% bonito kelp broth and 20% plum wine, and I would like to pair it with tempura tonight.
