I've always been curious about Tsuchida.
I've been following it because the taste changes a lot in a month.
The first day
I can feel the aroma of lactic acid and mirin-like flavor.
At first, you can feel the sourness, but later on, you can taste the strong flavor and bitterness.
It has a strong taste, but it also has a bitterness, so it is different from the sake.
The 3rd day
Compared to the freshly opened sake, the richness has faded.
The aroma is still the same, but the acidity is more pronounced and the umami is calmer.
1 week
The aroma is still the same as before.
The acidity starts to settle down and the raisin-like taste appears.
Later on, the bitterness comes out, and then the sesame taste and the savory taste come out.
The taste is still there, but it is different from the first day.
Week 2.
The same raisin-like taste as last week.
Compared to last week, the acidity and the umami have calmed down a lot.
It is much easier to drink than when it was just opened.
3 weeks
The intense umami of the first day is gone, and instead

1 month
You can feel the mild umami, the sweetness of the rice in the middle, the acidity later and the sharpness at the end.
It is not a raw sake, but the change of taste is amazing😳.

I've left it at room temperature since I opened it and it hasn't faltered at all and the flavors have changed 😊.
