Sugi Nishiki Edonoharzake, Shizuoka Prefecture
Junmai Nigori Sake with White Malted Rice
Rice used: 2038 Honorific Fuji produced in Shizuoka Prefecture
Rice polishing ratio 70%.
Alcohol content: 14° to 15
Sake degree -6
Acidity 2.5
Additive-free yeast, once-fired
It has a cloudy dark white color.
The first impression of the aroma is full-bodied
Rice water, calpis, or rather Bickle, with a hint of lychee.
The first impression on the palate is punchy but gentle.
Full-bodied sweetness, moderate acidity that is not overpowering, and mild bitterness.
Nigorizake is easy to drink, with a full flavor of rice, but the acidity from the white malted rice keeps it from being too sweet.
The aftertaste is rather long.
Personally, I do not like cloudy sake with too much rice flavor, but this one has a very good balance with just the right amount of acidity from the white malted rice.
I would like to drink it with delicious meat.
I think it would probably taste good warmed up.
