They made it with Yamanokami yeast, which is different from the usual Kaze no Mori No. 7 yeast. This yeast is very much appreciated.
What is Yamanokami Yeast?
Yamanokami Yeast is a yeast unique to Nara Prefecture that was isolated from sasa lilies in the spring of 2012 at the sacred grounds of Ojin Shrine, the god of sake, at the foot of Miwasan (Mt. Miwa).
Just seeing the bubbles on the glass makes me salivate😍Yeast from the shrine flows into my body. It tastes fresh, light, sweet and green. When I close my eyes, I feel like I'm bathing in a forest 🌿.
