I've drunk a lot of Hirotogawa, but this is my first Junmai Ginjo. Since it is Hirotogawa, I can only have high expectations. It seems to have a high reputation.
It has a slightly yellowish color and a slightly sweet aroma.
It is not so sweet. It has a pleasant bitterness, a richness of umami that fills the mouth, and then a faint sweetness. The bitterness flows away quickly and the umami flavor lingers.
I can't get enough of this richness.
It is a delicious taste that makes you sigh with pleasure.
It's not flashy, but it's an austere gem to savor slowly and carefully.
