I had previously had a Junmai Daiginjo of Yamanai and didn't like it very much, so I honestly didn't have high expectations.
The aroma is medium, predominantly blue melon flesh.
The taste has just the right amount of sweetness and acidity, with a nice sharpness, making it very easy to drink.
I like the balance of sweetness very much.
The sake is not difficult to drink at all and you can drink two or three cups at a time!
It's been a while since I drank until I got a headache💦.
It's 15% alcohol, so it's not extremely low, which was a surprise.
I think this is a totally different sake quality than the Yama-no-i graph.
I wonder if this is peculiar or if I want to repeat the Yamanoi's raw sake and compare...
