Hyakujuro Junmai Ginjo Akizakura Akita Sake Komachi Junmai Ginjo, the root of Hyakujuro. The unfiltered, unpasteurized version of this sake is called Sakura. This unfiltered raw sake is called "Sakura", and "Akizakura" is the fire-roasted version of "Sakura". It is soft on the palate, with a fresh floral aroma and sweetness, and the sourness of autumnal sake and the deliciousness of the rice spread in the mouth. It is an enjoyable sake with a slight bitterness and a sharp aftertaste.
