The famous sake, Kaze no Mori, is brewed in Nara and is likely to be served entirely unfiltered and unfiltered raw sake. This sake is said to be made with 80% Yamada-Nishiki shaved and brewed with No. 7 yeast. Rumor has it that the sake will be carbonated, as is typical of unfiltered nama sake, but I did not think the carbonation was that strong. As for the taste, it has a beautiful flavor, although the Yamada-Nishiki has not been cut down too much. It is fruity but not too strong, and I thought it was melon-like. It is a sake that many people seem to enjoy, and it is definitely delicious. It is not too strong for a sake made with less rice, so it will be accepted by everyone. It might go well with cream cheese.
