Koji rice 100% Yamadanishiki produced in Shiga Prefecture
Kake rice: Watabune No.2 from Shiga Prefecture
Yeast: Kyokai No.6, in-house strain
Polishing ratio 50%, ALC 15
I think this is the same sake with the blue label of Sensation Blue that I met in August 2023, but the label and description ("Kakemai" and "Koshiki Namaoto" were added) are different, so I decided to register it as a new sake 🤗.
The taste was almost the same as my note at the time, with a hint of fragrance and a dry, crisp taste on the palate 😋.
