I found it tucked away on a very bottom shelf 👀.
I didn't recognize it and lovingly rescued it: ☺️
I don't think "Shiboritate" is a common name for freshly stored sake...
It's fresh, but not too fresh.
Flavors like peach and melon 🍑🍈.
A little bit of seme flavor
Flows beautifully like a daiginjo, with a sharp and bitter taste.
Overall, I have the impression that it's a major flavor, but it has a local sake feel that I don't get much else ❔, which I think is pretty good 🤔.
