Tagaji in Kurashiki City, Okayama Prefecture, and Omachi is the name of Okayama.
It is slightly effervescent and has a rich spicy sweetness characteristic of Omachi. It has a tangy, dry aftertaste. It is wild and fresh like an unfiltered raw sake, and is quite a unique sake. We had it with pork gingerbread, but it seems to go well with meat dishes in general.
