Aoki Sake Brewery in Koga City
Well, I think Yonemune in Aichi was also Aoki Sake Brewery 🤔.
The brewer was there, so I decided to have something to drink, and he told me to try this dry sake.
Rice polishing ratio 55%, Ichibanboshi 16%, Sake degree +5, Acidity 1.5, 1595 yen
AOK-1 yeast (No.7 series)
I checked it out and it seems to be a standard dry sake.
AOK-1 yeast must be their own yeast.
It claims to be dry, but it has a nice aroma and is quite clean and fresh even though it is fire-brewed. It is deliciously dry and tasty.
