Sake My Life
Slightly sparkling, modern Niigata-style light-bodied sake.
I often drink Shiboritate during this time of the year, and it is usually a raw sake with an alcohol content of 17 degrees or higher, which gives it a strong, robust flavor.
However, it is delicious with just the right amount of lightness in the middle due to just the right amount of slight bubbles. While it has a good sharpness, it has the potential not to tire one's palate. It also has a crispness due to the acidity, not just the alcohol, while still having a strong umami flavor, making it easy to keep drinking.
To be honest, this is the best Niigata Shiboritate of the season.
Serve with teriyaki chicken thigh and sashimi.
