The first summer sake was Ohmine, a brand that is always sold out by the time I decide to buy it, so this time I got it early.
The aroma was subdued and lactic acidic. Maybe because it was the first day, it didn't smell much. Almost no gassy feeling.
Strong sweetness. There is also acidity, but the sweetness comes first. The image may be similar to that of the brewing forest.
In the latter half, the sweetness quickly disappears, leaving a slight bitterness, while the aroma of rice lingers. At first, I felt it was too strong, but I was surprised at how refreshingly it ended.
It was quite sweet, so I wondered if this was a summer sake? I wondered if this was a summer sake, but the refreshing feeling in the second half convinced me. I was impressed by the high level of quality.
