For comparison with new sake
Sogape that has been in the fridge for about a year
Finally, we can compare the new sogapé with the new sogapé 🥹.
It's the same numerosis, but to be more precise, Domaine Ikeda and Normal are different.
I'm tired of waiting so I'm going to compare this pair😅
First, Numérosis 2023
Miyamanishiki 59% polished, 15% alcohol
Pop the cork.
When you pour it into a glass, you will see small bubbles 🫧.
It still has the freshness of new sake.
The upper aroma is a little tangy.
When you put it in your mouth, the main thing that jumps out at you is the thick acidity of the sake's yeast yeast.
The sweetness is moderate and slightly dry.
The refreshing mouthfeel is like a white wine even though it is sake.
However, it still has some umami, so you can call it a sur lie style of white wine 🤔.
The slight bitterness at the end is truly sake!
I remember fresh Sogape was like this...
And then we went to 2022 😆.

Drank alone on the 3rd day after opening the bottle.
The zingy aroma is gone, and the acidity-driven flavor is delicious, with a hint of sake yeast.
The taste of new Sogape sake was reaffirmed 😊.
