Tasake 50th Anniversary Bottle Junmai Yamahai Shibori Koshiro Nishiki.
The Tazake brand, created in 1974, celebrates its 50th anniversary in 2024. The special bottle commemorating the 50th anniversary is made from Kojo-nishiki, the first rice suitable for sake brewing developed by Aomori Prefecture, polished up to 50% and brewed in Yamahai style.
It was bottled on New Year's Eve, and we had to drink it before the end of the year.
It has a mellow, apple-like aroma on the nose and a full-bodied sweetness of rice on the palate. The lactic acidity from the Yamahai process tightens the impression.
When served warmed up, it has a beautiful acidity and is extremely tasty!
It was a pleasant way to end the year.
