According to the sake shop's explanation, it's unfiltered, unpasteurized sake. This is the first time I've drunk Taka at home. It's a little muddy and has an origarami feel to it. It's fresh and fruity, but it's not rough and easy to drink. The balance of sweet, bitter and spicy is perfect.
