I should have left the one I bought in Mie😅.
I bought it in Wakayama about 6 years ago.
Ozaki Sake Brewery had never been out of Wakayama prefecture, but a liquor store in Osaka started doing business with them, so I went to buy some. According to the liquor store, they had already been getting it through a wholesaler before.
It seems they use a yeast found in the soil of Kumano Kodo. I like that it has a serial number 😁.
Sweet and sour, with a touch of Yamahai in the second half, but the last half is very dry!
I'm a little concerned about some off-flavor nuances...
A few hours after opening the bottle, it started to get a little smoky 🤔.
