This is a local sake from Fukaya City in Saitama Prefecture, the hometown of the now popular Shibusawa Eiichi. This brewery is almost unknown brand in the whole country, isn't it? There are three other sake breweries in Fukaya City. This Fukaya City is the city next to where I grew up, and it is now the same Fukaya City due to the big merger in Heisei. The preamble has become much longer, but when I poured it into a glass and looked at the color, I could not see any coloration, and it was clear. First of all, alcohol is assertive in the aroma, and there is a good smell of rice behind it. When you put it in your mouth, the alcohol and rice taste are the same as in the aroma. I drank it chilled, but it would definitely be delicious warm. Furthermore, this sake was purchased at the brewery last year and was left at room temperature for a while. I'm sure there are many sakes like this one that don't lose their flavor even after being kept for this long.
I'd love to try the other two breweries in Fukaya City.
