Nozawa Sake Brewery in Oguni-machi, Yamagata Prefecture. I don't mean to be rude, but to be honest, I think it's a minor brewery even in Yamagata Prefecture. I drank it for the first time.
For a rice polishing ratio of 35%, it was quite spicy, and the aftertaste had a character similar to bitterness.
After letting it sit for a few days, it mellows out. Personally, I found it easier to drink after letting it sit for a few days.
