A delicious one. Gentle acidity, a hint of sweetness, and moderately assertive alcohol are overall gently saturated and well balanced.
The very slight yogurt-like acidity is probably lactic acidity from natural lactic acid bacteria.
The flavor is rather firm, but nice and round and gentle.
It is delicious and recommended.
Hokosugi no Yamahai Junmai-shu
Calm sake. Mellow texture on the tongue. The gentle flavor that gradually spreads in the mouth is attractive. It passes smoothly down the throat. Delicious.
It would be delicious heated, but I drank it cold.
It might be better at room temperature.

The sake-like aroma and acidity are impressive. It has a nice, crisp dry taste. The taste is rather strong. It is neither good nor bad, but it is just an ordinary sake.

SHIKI is a new brand of sake brewed by Kawatake Brewery in Mie Prefecture. Kawatake Brewery has long been responsible for brewing sake for the Ise Jingu Shrine.
SHIKI is made with water from the Miyagawa River system, which boasts the highest quality water in Japan, and Yuminariho sake rice.
Yumi-nariho is a new type of sake rice that is a mutation of Ise-Nishiki, a native sake rice variety of Mie Prefecture, which is also called the ancestor of Yamada-Nishiki. SHIKI is the only sake brewed with Yumigataho in the world. SHIKI has a fruity aroma and flavor, and a clear, transparent taste with a sense of watery goodness.
