Iraka Sake Brewery The aroma is like rum raisins. The flavor comes from the depths of the micro-foaming stimulation. It is dry, and the bitterness tightens it up. The aroma is showy, but strangely enough, it does not disturb the meal. It's nice. It is delicious. One of the three most mysterious breweries in Nagano Prefecture (personal opinion). It was. Purchased at a sake brewery. A new sake brewery in Matsukawa Village. At the moment, the sales floor is open on Saturdays from 1pm to 5pm until the end of December. The "White" is a product exclusive to Matsukawa Village. It is only available at the brewery and at Farm Ichiryoku, a five-minute drive away. Now, you can get sakekasu like rice cakes (a lot). As it was the first product from a new sake brewery, I was very enthusiastic and checked the sales date as soon as the phone number was published on the official website and made a reservation. I thought it was going to be more of a festival. But I was happy to talk a lot. Now I have a chance to be an old-timer.

This is a product of the newest sake brewery in Japan, "Iraka Sake Brewery". The brewery invited a toji (master brewer) from Taishinshu to brew this sake. It has a ginjo aroma like grapes, and the moment you put it in your mouth, you feel a fresh, fizzy sensation. It has a juicy flavor as it passes down the throat, and a gentle lingering aftertaste. The specs are undisclosed, but the rice is locally grown under contract, so it is probably Hitogokochi. The level of quality is high, as is that of Yamazan, a new brewery also from Nagano. Both have a similar taste, but I have the impression that there are many parts that are more subdued than the freshness of the other one.
