I wanted to compare drinks in a luxurious way.
We opened the bottle at the same time.
On the first day, the flavor was a little tough, so I let it sit for 3 or 4 days.

This year, I felt a little more acidity.
It has a beautiful Tohoku-style sake flavor.
It has a sense of unity of flavor, sweetness, umami, and acidity.
I thought it was a perfect match for delicate Japanese cuisine.
I thought it was a quintessential Jikin.
Senbon Nishiki
The aroma is very slight, with hints of lychee and strawberry.
Of course, there is no alu smell.
Taste is full-bodied.
Sake Mirai
The aroma is slightly pear.
No smell of alcohol as well.
Taste is more refreshing than Senbon-Nishiki.
I'm looking forward to seeing the changes in a few more days.

A little astringency has appeared.
Sake Mirai
It is now soft and refreshing with a slight fruity taste that passes into the nose.
It's not easy to find sake of this level (*^^*).
