PeiShinshu Kamerei has become a popular sake in Ueda, Shinshu.
The production is small and it is quite difficult to obtain, but I got a bottle of Sanke Nishiki, an unfiltered, unpasteurized sake. It is really delicious. It has a sweet, fresh, fruity, and rich mouthfeel. The aftertaste is refreshing and you can go on and on. It would be great if it were more available.
