ariccyYamanokami is a yeast collected in the sacred area of the Ogami Shrine.
The aroma is definitely a little forest, but overall it is not much different from the usual Kaze no Mori, with a banana aroma and a rice-type smell.
The taste is surprisingly sweet.
The label described it as slightly dry, but as I recall, it is a bit on the sweeter side of the Kaze no Mori range.
The main flavor is a rich but clear sweetness, balanced by the bitterness of Akitsuho.
It's been a long time since I've tasted Kaze no Mori, but it's still delicious!
I was expecting a rougher taste because of the unknown wild yeast, but it is a very good sake with a clean taste and a lot of drinking power.
