It's been a while since I've had a Yonemune 😊.
Sake degree is +13 and acidity is 3.0, so it is classified as darker.
The aroma is a little sour like an apple and lactic acid drink.
The taste is fruity at first, and then a beautiful umami comes up quickly.
I thought it would have a more robust taste, but the beautiful acidity of the nascent yeast is delicious!
