ねむちOkazaki, Aichi, Japan. Limited partnership Shibata Sake Brewery. Kou no Tsukasa Junmai Ginjo Ginsekai (Nigori Nama-zake) Purchased at Haretoke, our first sake shop. I had it cold. When the bottle is opened, there is a short gas sound. When poured into a glass, a few bubbles adhere for a moment. The color is a translucent milky white. The nose is grapefruit-like and grain-like. The mouthfeel is slightly fizzy with a slight fizzing sensation on the tongue. The taste is silky and slightly sweet to bitter. The taste is silky, slightly sweet to bitter, and unexpectedly dry from the middle. After swallowing, a citrusy aroma spreads through the nose, and the bitterness is grapefruit-like. If anything, I would say it is more rice-like... I guess the spiciness comes a little later. Ingredients:Rice(domestic),Rice Koji(domestic) Rice used: 100% Yumesansui produced in Aichi Prefecture Polishing ratio: 60 Alcohol content: 15%.
