Actually opened this bottle a few days ago and sampled it with some sushi and sashimi. At the time I thought it had a mild caramel flavor. Today with 蕪のきんぴら the bitterness of the turnip stems made the caramel flavor more pronounced.! Very interesting. However カボチャクリムサラダ in contrast mutes the caramel flavor bringing out some bitterness and breadth of flavor.
