アラジンSake served at Nihonshu Shika, a sake bar in Naramachi. It is a surprise sake from the Shirasugi Sake Brewery called Nue. Chimera," made with three types of koji and three types of yeast, is very popular at Shirasugi Shuzo, but this Nue is brewed with four types of koji and four types of Kyoto yeast 😳. Chimera is a fusion of lion, goat, and snake, and 鵺 is a fusion of monkey, raccoon dog, tiger, and snake, both imaginary beasts. The koji used in 鵺's brewing is a blend of four types of koji (white, black, and yellow koji plus mirin koji😳), and four of the five types of Kyoto yeast, except for "Kyo no Koto". The sake rice is 100% Koshihikari since this is a rice brewery 🌾. I have never heard of a sake like this and have no idea how it would turn out 🤔 The slightly loose-looking sphinx on the label was designed by Toji Satoru Shirasugi. When you drink it, the sweet and sour taste in the beginning is typical of the Shirasugi brewery. From the middle part of the bottle, you will feel a rather complex aftertaste. It was a delicious sake, with a rich flavor for those who like complexity, and for those who don't, the sweet and sourness made it easy to drink. By the way, I asked Mr. Tadatsu of Shirasugi Shuzo to eventually brew "Yamata no Orochi" using 9 types of koji and 9 types of yeast! I asked him to do so 😁.
