Since this is an acid burst, I thought the acidity was quite compelling, but I got the impression that the moderate acidity enhanced the sweetness and umami of the sake. I felt some kind of green apple-like sweetness that spread softly and infinitely from the back.
When served with food, the richness of the sake's flavor prevails, so I think this sake is best suited for an after-dinner drink.
