The aroma is mild, but fruity, like pears, and very different from a cloudy sparkling. After a little while, a woody and honey-like smell emerges, giving it a very savory impression. The taste is a little bit sweet and umami, but it is well balanced with the carbonation and a little bit dry but not sour. There is a bit of astringency and bitterness from the oak barrels, similar to the oak storage of Shinmasa, which adds depth to the flavor. Overall, the taste is clean, elegant and delicious. As a food wine, like champagne, it's a versatile sake that goes with everything.
