Zenchidori Daiginjo Yamadanishiki.
Zenchidori is a rare sake brewed by Nishida Shuzo, famous for its rice wine. Its name comes from the Zenchidori bird, which is a national natural treasure.
Only the heart white of the Yamada-Nishiki is used, polished to 40%, and the pressing is done without artificial stress.
It has a sweet, yet refined ginjo aroma like melon, and a very clear taste with a gentle sweetness and no hint of cloying flavors.
When served heated two weeks after being uncorked, the fruity aroma becomes more pronounced and the umami flavor spreads!
