- Milan HauserRice: Yamada Nishiki (koji), Saito no Shizuku (mash), polishing rate: 60%, yeast: #701, SMV: +2, acidity: 1.5, alc.: 15% Drinking sake after some time. This tastes excellent! Fresh and gassy like namazake. It is refreshing and tasty. Aroma is mild and fruity. Green apples. And it tastes sour like green apples too! The acidity and sweetness are in balance. There is savory taste of Yamada Nishiki too. Lovely sake! I read that it is made by female toji, Miki Fujioka, which is great. I want more!
