Quite acidic and dry, perfect to accompany stronger foods. Nuances of marshmallow and caramel though only a hint. Very interesting in almost NO character of fruit, flowers or melon which usually so common in many sake. A very straight forward sake not complex which is not such a bad thing. Enjoyed with panko chicken and roasted baby carrots and baby potatoes with ketchup prepared by my wife.

Fuller bodied than I usually like with umami flavors, slight candy, citrus and a bit of acidity. Was actually perfect with my wife’s beef sukiyaki over rice and a nice contrast to the lighter sakes I usually drink. As the French say Vive la difference! :-)

Finished off my 2nd bottle tonight with salmon sashimi, hamachi kama and grilled sanma saury!

Not bad not great. Light and dry, I detected some hints of banana, grape and some tropical fruit, and of course some cedar and wood. Tasted great with a grilled salmon fillet my wife made for me. :-)
