Laughing Shiki Theatre: The Night Before Revolution. This is the eve of the Revolution, from the Sho Shiki Gekijo series of one-time guerrilla shipments released by the Sho Shiki Sake Brewery in Koka City, Shiga Prefecture. The brewing method was changed due to a change in the quality of the sake rice, and the quality of the sake has changed drastically. We look forward to the developments after the change and enjoy it with the excitement of the eve of the revolution. The specific name is Junmai, but the koji rice is Watafune No. 2 and the kake rice is Yamada Nishiki, both from Shiga Prefecture, polished to 50% and brewed with Association No. 601 yeast. It was served cold. The nose is a mixture of ripe apricot aroma and fresh quince aroma. The appearance is almost clear with a slight yellow tinge, and the appearance seems to thicken as it pours. The mouthfeel has a texture that spreads easily without thickening. At first, a juicy, light sweetness on the tip of the tongue and umami at the back, followed by a strong acidity that spreads and quickly clears towards the back of the throat! After a few sips, the soft sweetness and mild umami become more noticeable, and when you roll it over, the sweetness and umami come out even more than the acidity, and the sharpness of the acidity mellows out.
