The sake is as stable as ever.
Although the mouthfeel is calm for a sake made from directly pumped water, a slight piquancy gives it away. When you put it in your mouth, sweetness comes first, but soon there is bitterness and spiciness. And then there is the piquancy.
It is really a versatile drinker. It can be used with all kinds of Japanese food. However, because of its pickiness, it is a little uncomfortable in vinegared dishes.
I have no complaints about homemade pickled Chinese cabbage.
