The standard of Kaze no Mori This sake is the "face" of Kaze no Mori, made from Akitsuho rice. Although the rice is 65% polished rice, which is the pure rice standard, it has a pleasant fruity melon aroma, a clear mouthfeel, and a gentle aroma like white peaches. There is also a mineral aroma, perhaps derived from the limestone of the Kongo mountain range. In the mouth, fresh slight carbonation stimulates the palate, and the mild sweetness softens it gradually. The bitterness that lingers in the aftertaste is pleasant and balances out the sweetness along with the acidity.
