Delicate sweet and sour. Clear minerality. Moderate umami, light astringency. Delicate but not lacking.
Serve with fried Chinese cabbage and bean sprouts, grilled white eggplant with yuzu pepper from Uonuma, grilled Manganji peppers, and sauteed Nanbu chicken.
